If you‘re a peanut butter and jelly lover... stop what you're doing!
For me and my family, thumbprints are typically a brown sugar Christmas cookie coated with chopped walnuts + filled with all different kinds of fruit preserves.
When I found out about these peanut butter and jelly thumbprints, all I knew was that I would be making them real soon whether it was Christmas or not. I was a bit skeptical about the recipe at first considering how simple it is, but I made em + brought them along for my picnic + they paired just perfectly with a summer sunset on the beach! So moist and so soft- simply the perfect treat for all the pb&j lovers out there and definitely a great cookie to bring along if you're celebrating Christmas in July this year!
Ingredients:
☼ 1 c flour
☼ 1/2 tsp baking powder
☼ 1/2 tsp baking soda
☼ 1 c creamy peanut butter
☼ 3/4 c jelly or jam of choice
How to:
Preheat your oven to 350° and begin mixing together your flour, baking powder, baking soda, peanut butter, and 1/2 c of your jelly- I used grape jelly for the dough. Once all of the ingredients are combined, place about 1 tbs measurements of dough on a lined baking sheet and gently press your thumb in the center to create space for the jelly. Fill the center of each cookie with the remainder of your jelly. I topped my cookies with a mix of grape jelly, raspberry preserves, and blueberry preserves for a larger variety of flavors. Bake for 8-10 minutes, or until golden. remove from the heat + enjoy!
