Directions:
1- Preheat your bbq to 400 degrees. Wet the husk of the corn. Cook for 15-20 minutes until there is a nice char on both sides.
2-Let this cool. Then, cut the corn off the cob.
3-Add in one cup of finely chopped cotija cheese.
4-Add in diced red onion.
5-Add in salt, pepper, garlic powder, onion powder, a tiny bit of cayenne pepper and fresh lime juice.
6–Add in light mayo. Combine and mix.
7-Garnish with some cilantro.
