GRECIAN SALMON SALAD

Ingredients:

  • 2 6oz Pieces of Salmon Skin On

  • 3 Table spoons crushed garlic

  • 1 table spoon smoked paprika

  • Salt and pepper to taste

  • 2 cucumbers cut the long way and chopped

  • 10 oz grape tomatoes cut into 4’s

  • 1/2 red onion cut into thin strips

  • 1 half brick of feta cut into small pieces - crumbled works as well

  • 4 tablespoons of Extra Virgin Olive Oil

  • Juice of 1 lemon

  • Fresh herbs of your choice if you would like


Instructions:

  • Step 1 - Add the garlic, paprika, salt and pepper together and mix, the objective here is to have the wet garlic absorb the color of the paprika

  • Step 2 - slather the top of the salmon in the garlic mixture

  • Step 3 - Warm your oven safe pan on the stove top with 1 table spoon of Oil - Once its hot add the salmon skin side down to the pan and cook in a preheated 325 degree oven for 25 minutes

  • Step 4 - In your serving bowl, add the cucumbers, tomatoes, red onion, feta together

  • Step 5 - Mix together the remaining Olive Oil, lemon juice and herbs if you choose.

  • Step 5 - Pour that mixture over the veggies and toss

  • Step 7 - Remove the salmon from the oven, remove the skin and flake onto the salad

  • Step 8 - Eat it UP
