Greek-ish Chicken

Do you love the delicious flavors in Greek cooking? Try this one pan Greekish dinner!


2 chicken breasts, boneless

2 tsp dried oregano

1 tsp coriander (optional)

2 tsp kosher salt

4 tbsp butter

2 cups chicken stock or broth

2 cloves chopped garlic

Zest of 1 lemon, use remaining lemon to squeeze on servings

1.5 cups orzo pasta

1 can artichoke hearts

4 oz. cubed feta cheese

Mix the following, and set aside:

Chicken stock/broth

Dried oregano

2 tsp kosher salt

Chopped garlic

Lemon zest

Sprinkle chicken breasts with coriander and some of the 2 tsp of salt.

Melt butter in heavy, oven safe pan.

Brown chicken in butter until equally brown on all sides. (You are not cooking the chicken through, simply giving it a nice golden color).

When chicken is nice and browned, remove from pan, and pour the broth mixture into pan.

Add orzo to pan, stir and bring to light simmer.

Nestle chicken into center of pan on top of orzo.

Top with artichoke hearts.

Bake 350 degrees, uncovered, for 25 mins

Add cubed feta cheese

Drizzle with EVOO and broil to desired color
