Kimchi Porky Don

This is actually a quick easy recipe, perfect for a weeknight dinner when you want something fast, yummy and satisfying, especially when you are binge watching Korean drama series.

We use homemade kimchi, but you can use store-bought. If you do, you may want to season with a light hand as we find store bought kimchi usually much saltier than homemade.


(Serves 2)

Ingredients

· 2 cups of kimchi, cut into bite size pieces (do not discard the kimchi juice, add that into the stir fry)

· 250g/8oz of shabu shabu pork (you can use regular thinly sliced pork loin)

· 1 leek, thinly sliced

· 1 red onion, cut into wedges

· 1 tablespoon of gochujang (Korean pepper paste)

· 1 teaspoon of fish sauce (can replace with soy sauce)

· 1 teaspoon of sugar

· 1 tablespoon vegetable oil

· spring onions and sliced red chili to garnish

· steamed Calrose or jasmine rice

Steps

1. Add vegetable oil to a wok or a skillet and heat it up.

2. Add pork to wok and stir fry to brown. Be gentle with the pork slices as you flip them around as they may tear.

3. Once pork has browned, add kimchi (with juice) to wok and fry for 2 mins.

4. Add the rest of the ingredients except spring onions, chili and rice and continue to fry for 3 mins. We like our onions crunchy but if you prefer them softer, fry them for a bit longer.

5. Serve over rice and garnish with spring onions and chili!

Note

· Can replace pork with chicken, beef or any kind of protein. You just have to adjust the cooking time.

· Can be made vegan if you replace pork with tofu and fish sauce with mushroom or soya sauce.
