This is an incredibly easy and delicious midweek meal that only takes about 30 mins to prepare. The flavors are nutty, spicy, and with a hint of sweetness. I guarantee you will be licking the plate to not waste any of the amazing sauce. I served mine with mashed potatoes and green peas but this would also work with rice or noodles.
Recipe serves 2 but double ingredients to serve 4
Ingredients:
2 salmon fillets
1 tbsp sriracha
1 tbsp roasted sesame oil
1 tbsp soy sauce
1/2 tbsp honey
1/2 tbsp Worcestershire Sauce
A squeeze of lemon (optional)
Instructions:
Mix together the sriracha, sesame oil, soy, honey, and Worcestershire sauce. Taste to ensure you have a mix that works for your tastes buds, you can add more hot sauce or lemon at this point.
In a bowl pour the mix over the salmon but leave a little to the side for later. Leave to marinate for a max of 30 mins.
Whilst marinating heat oven to 180c.
Place a big piece of foil in a baking tray, ensuring there is enough to loosely wrap the fish. Place fillets on foil and if necessary pour on a bit more sauce. Wrap the salmon to make a foil parcel and bake for 10 mins.
After 10 mins remove salmon from oven, completely open foil parcel, and return to oven for 5-10 mins depending on the size of your fillets. Check to make sure your salmon does not dry or burn due to the sweet ingredients.
Once fish is cooked, remove from foil parcel, add to plate and pour some of the juice over the fish, eat immediately.
NOTE: for the size of my fillets, I baked the salmon for a total of 15 mins. It carries on cooking after removing from the oven.
