makes 24 cupcakes

☼ 1 1/2 c flour

☼ 3 tbs unsweetened cocoa powder

☼ 1 tsp baking soda

☼ 1 tsp salt

☼ 2/3 c buttermilk

☼ 2 tsp vanilla extract

☼ 1 tsp red gel food coloring

☼ 1/2 c unsalted butter, softened

☼ 1/4 c canola oil

☼ 1 c sugar

☼ 2 eggs

Cream cheese frosting:

☼ 4 oz cream cheese, softened

☼ 4 oz butter, softened

☼ 2 c powdered sugar

☼ 1 tsp vanilla extract

How To:

Preheat your oven to 350°. In a large bowl, mix together your flour, cocoa powder, baking soda, salt and set aside. In a separate bowl, whisk together your buttermilk + red food coloring until well blended. Add in your butter and sugar and beat until fluffy, about 2-3 minutes. Add in your oil, eggs and vanilla + beat for another two minutes. Slowly combine your dry ingredients with your wet ingredients and continue to mix until all of the ingredients are blended. Add your batter into a lined cupcake tin and bake for 18 minutes.

While the cupcakes are baking, beat the softened cream cheese and butter in a large bowl until thoroughly mixed together. Slowly add in your powdered sugar and vanilla extract + continue beating until all of the ingredients are combined. Pipe small dollops of frosting in the center of each cupcake after they have cooled down and enjoy!
